ingredients:
4.5 lb pale malt
4.5 lb flaked wheat
1 oz kent golding (uk) @ 60 min
.75 oz coriander seed, crushed
.75 oz orange peel (i used dry)
yeast: white labs belgian witbier
mash schedule:
in: 3.5 gallons water @ 165 F for 60 mins
out: 3 gallons water @ 196 F
notes:
crash cooled this keg @ 40 F for a week, then force carbonated at 10 psi for another week.
for some reason, the beer cleared out. perhaps it could have been the long time window between getting the ingredients and actually brewing (approx. 3 - 4 months). i have been drinking this on and off for about a week and it seems to be getting better. coriander notes are becoming more prominent. compared to the real blue moon, this version lacks the body and color of the beer. overall, a good spring / summer beer. i have to remember - include the orange peel as a garnish.
look at that lacing though! the way the foam coats the glass on the way down... that's the sign of a good beer.
